     RHUBARB / BERRY PIE

Ingredients
Double Pie Crust
1 C. sugar
3 T. brown sugar
3 T. quick cooking tapioca
4-5 C Rhubarb ( about 2 lbs )
1 C. Berries (Strawberry or Raspberry)
2 T. Lemon juice
 

Instructions
In a large bowl, stir together sugars and tapioca. Add fruit and lemon juice. Mix gently but all. Let stand for 30 min. to let tapioca dissolve/soften and then stir gently again. Pour filling into prepared dough in pie plate.I usually make a lattice top. BAKE at 400 degrees until bubbly , 50 - 60 min.
