     Cottage Cheese Oatmeal Pancakes

Ingredients
1/2 cup Cottage Cheese (2%)
1/2 cup Oats
2 Whole Eggs
1 tsp Vanilla
1/2 tsp Baking Powder
3 tsp Splenda
1/2 tsp Cinnamon
Blueberries (optional)
Low Carb Syrup (optional)
 

Instructions
1. Blend all ingredients together. 2. Spoon onto oiled pan heated to low/medium heat. (Makes 7-8 pancakes depending on size) 3. Cook 3-5 minutes per side, flipping once in between.
Nutrition Info - Serving Size - Makes 1 Serving (7-8 pancakes) Calories - 400 kcal Fat - 15g Carbs - 33.5g Fiber - 4g Protein 33.5g
For this recipe I added blueberries but you could add anything - chocolate chips next time! May try to add protein powder and lower oats too. Topped with low carb syrup.
