     Vegetable Cheese Casserole

Ingredients
1 c white rice
1 red pepper (sliced)
1 small onion (minced)
4 oz frozen peas
1 1/2 c cottage cheese
14 oz can beef broth
8 oz mushrooms (sliced)
3 T oil
1 c carrots (sliced)
 
4 oz cheddar cheese (grated)

Instructions
Preheat to 350.
Cook rice in broth 20 minutes on low heat, covered.
Saute peppers, shrooms & onions.
Blanch peas & carrots. Mix all, add cheese. Bake 45 minutes.
