     Chocolate Zucchini Muffins

Ingredients
2 cups of all purpose floor
1-1/2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
2/3 cup granulated sugar
1/2 cup unsweetened coca powder
1/2 cup milk
1 egg
2/3 plain yogurt
 
1/3 cup vegetable oil or melted butter
1 tsp vanilla
1 cup packed shredded zucchini

Instructions
Preheat over to 375F. Line a 12-cip muffin pan with paper liners or grease well.
Whisk together flour, baking powder, salt, baking soda in a large bowl. In another bowl, whisk together sugar and cocoa. Gradually whisk in milk until blended, then whisk in egg, yogurt, oil and vanilla. Stir in zucchini. Pour over dry ingredients and stir just until moistened.
Spoon into prepared muffin pan. Bake for approx 22 mins. Let cool in pan for 5 minutes then transfer muffins to the rack to cool completely.
