     Zucchini Cake

Ingredients
2 1/2 cups flour
1 1/2 tsp. cinnamon
1 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1 cup oil
4 eggs
2 cups shredded zucchini
1/2 cups chopped walnuts
 
FROSTING
1/2 softened cream cheese (3 o.)
1/4 cup margarine
1 tbsp. milk
1 tsp. vanilla
2 cups icing sugar
Additional chopped nuts

Instructions
In mixing bowl, combine flour, sugar, b. powder and soda. Combine oil and eggs and add to dry ingredients and mix well. Add zucchini and mix. Add nuts and stir. Pour in greased 13 x 9 pan. Bake at 350 for 35 - 40 min. Cool. For frosting, beat cream cheese, butter, milk and vanilla. Add sugar and mix well. Frost cake.Sprinkle on nuts if desired. Yield- 20-24 servings.
