     Cheesy Portobellos

Ingredients
4 portobello mushrooms (about 4 inch) stems removed.
¼ tsp salt.
¼ tsp pepper.
½ lbs lean ground beef.
½ cup chopped onions.
4 bacon slices, chopped.
1 or ¼ tsp garlic clove, minced.
4 oz brie cheese round chopped.
½ cup crumbled feta cheese.
 
2 tbsp chopped fresh basil.
½ tsp finely chopped chipotle pepper in adabo sausce.

Instructions
Now this is the kind of entrée you’d expect to see in a very popular big-city bistro. With its smoky bacon flavor, feta and brie cheese, no one’s ever going to believe it was made by a rookie.
Preheat oven to 400ºC. Using a small spoon, remove and discard gills from mushroom caps. Sprinkle with salt and pepper. Place in greased 9x13 inch pan. Bake for about 8 minutes until starting to soften. Meanwhile, heat large frying pan on medium-high. Add next 4 ingredients. Scramble-fry for about 8-10 minutes until bacon is almost crisp and beef is browned. Drain.
Add remaining 4 ingredients. Stir. Preheat broiler. Spoon beef mixture into mushrooms. Broil on centre rack in oven for about 5 minutes until filling is bubbling and golden. Makes about 4 stuffed mushrooms.
