Ingredients
1 1/2 lbs boneless pork roast (cut into chunks)
8 diced potatoes (russet, peeled)
2 yellow onions (diced)
6-8 tsp parsley
 

Instructions
Preheat oven to 325 degrees.
Place all ingredients into roasting pan and add water to cover half the contents.
Bake for 3 hours.
