Place chopped chocolate in a large stainless steel
bowl. Set aside.
In a large high sided sauce pan heat cream & butter
over medium high heat. Stirring frequently until it
starts to boil. Remove from heat & pour over chopped
chocolate.
Stir until chocolate is completely melted & mixture
is smooth. Cool completely & store in fridge. Can be
reheated in a double boiler over simmering water.
