1 cup bulghur wheat

1.5 c boiling water
|
|
1/2 c freshly squeezed lemon juice (2lemons)
|
|
1/4 c olive oil - good
|
|
3 1/2 tsp kosher salt
|
|
1 c minced scallions, white and green parts (bunch)
|
|
1 c chopped fresh mint leaves
|
|
1 c chopped fresh flat leaf parsley
|
|
1 hothouse cucumber/unpeeled, seeded medium dice
|
|
|
|
2 c cherry tomatoes, cut in half
|
|
1 t fresh ground black pepper
|
|
Place wheat in large bowl, pour in boiling water
|
|
add lemon juice, olive oil an d1/2 t salt. Stir, leave
|
|
stand at room temp for one hour.
|
|
Add other ingredients. Mix well. Chill and serve.
|
