     Frozen fish filets

Ingredients
Frozen fish filets (cod, haddock, salmon)
Panko bread crumbs
grated parmesan or romano cheese
pepper
salt
lemon or lemon juice
parsley
 

Instructions
If possible, take out the piece of fish you want for dinner in the morning. Cut the vacuum sealed package and put the piece of fish in a regular zip lock bag and put in the refrigerator to defrost. If unable to defrost early, take the fish and still put it in a ziplock and then place the bag in a bowl of warm water for about 20 minutes to defrost. Just feel often so it doesnt get too mushy. Preheat oven to 425 degrees. Put aluminum foil in oven pan. Spray with PAM. Put fish in pan, very lightly salt or no salt, add pepper and parsley. Put about 1 tablespoon of lemon juice around fish. Mix 1 tablespoon PANKO and 1 tablespoon parmesan cheese and spread on fish. Bake about 20 minutes, but watch carefully the first time because all ovens are different. It should look smaller and toasty on top.
