     St. Pattie’s Day Cookies

Ingredients
1 c. butter
1/3 c. powdered sugar
1 egg
1 t vanilla
¾ t almond extract
2 c. flour
1 (34 oz) pkg. instant pistachio pudding
½ c. miniature chocolate chips
 

Instructions
Cream together butter and powdered sugar. Add egg, vanilla, and extract. Beat in flour and instant pudding. Stir in chocolate chips.. Place on greased cookie sheet. Press thumb into each cookie. Bake at 350 degrees for 10 minutes. Let cool. Filling- 2 T butter, 2 c. powdered sugar, 2 T milk, 4 oz. cream cheese, softened, 1 tsp vanilla. To make filling, cream butter and cream cheese add sugar. Mix in milk and vanilla. Fill each cookie with a dollop of filling. Drizzle with 1 pkg of chocolate chips melted with 2 T. shortening.
