Using a double boiler, melt butter and milk. Whisk, stirring occasionally until butter mixes with the milk. Slowly add 3 cups shredded cheddar and stir until it is melted and thickened. Add American cheese, slice by slice to desired thickness. When all is melted together, put pasta in bowl and add cheese sauce, cottage cheese, onion powder or grated onion, and salt and pepper to taste.
