     Unstuffed Chicken Cordon Blue

Ingredients
1 tablespoon olive oil
4 bonless, skinless chicken breast
2 tablespoons Dijon mustard
4 slices deli ham
1 cup shredded Gruyere chees or swiss
15 Ritz crackers
 
Instructions
Heat oven to 475 degrees. Brush a rimmed baking sheet with the olive oil. Salt and pepper chicken. arrange chicken on baking sheet.
Spread mustard all over chicken, then top each breast with 1 slice ham,(fold ham in 1/2 if you need to make it fit on top of the chicken. Add 1/4 cup Gruyere on top of each ham. Add coarsely crush crackers and sprinkle over top and press into the cheese to adhere.
Bake for 25-30 minutes rotating sheet halfway through baking. Check that chicken is done and not pink. Serve
