Ingredients
1 28-oz can Diced Tomatoes , (Muir Glen Fire Roasted are great, but any would work)
1 Jalapeno Pepper, chopped (optional-seeds and veins removed to lessen heat)
1-2 green onions, chopped
2 T lime juice (or substitute apple cider vinegar)
a handful of chopped fresh cilantro
1 clove garlic, chopped (optional)
1/4 tsp ground cumin (optional)
Salt to taste
 

Instructions
Drain a little of the excess liquid from canned tomatoes.
Add all ingredients into blender or food processor and pulse to combine to desired "chunkiness". (Do not over blend/process.) Adjust salt as desired.
Variations: You can used fresh tomatoes if you have good ones in season. I would say approx. 3-4 tomatoes would be equivalent. Seed and chop them. You can use any kind of onion in a similar amount.
