     Minestrone

Ingredients
2 Tbs olive oil
2 cups chopped onion
Garlic cloves, minced (to taste)
1-2 tsp salt
1 stalk celery, minced
1 carrot, diced
1 zucchini or eggplant, diced
1 tsp oregano
1 tsp basil
 
1 bell pepper, diced
3-4 cups water
2 cups tomato sauce or puree or chopped tomatoes
1 1/2 cups cooked navy or kidney beans
1/2 cup uncooked pasta

Instructions
Cook the onion and garlic in the olive oil in a large pot till onion is translucent, then add celery, carrot, and spices. Cover and cook over low heat about 10 minutes. Add everything else except pasta and cook till veggies are tender. Bring soup to a boil and add pasta. Cook and stir until pasta is tender.
