     CAKES - Dr. Bird Cake

Ingredients
3 cups flour
1 tsp baking soda
1 tsp cinnamon
2 cups sugar
1 tsp salt
1 1/2 cups oil
8 oz crushed pineapple and juice
1 1/2 tsp vanilla
3 eggs
 
2 cups diced bananas
1 cup pecans, chopped
Instructions
Sift together the dry ingredients. Add undrained pineapple, oil, vanilla, eggs and bananas, mixing until blended. Do not beat.
Pour batter into greased tube or bundt pan and bake 1 hour 20 minutes. Cake will crack slightly on top. Cool cake in the pan on a rack.
Ice with a cream cheese icing.
