     Home Made Tomato Sauce for Pizza and Pasta

4 Kilos Fresh Tomatos
2 Lt Hot Water
Quarter of a liter of Olive Oil
Whole head of Garlic
2 tablespoons Salt
2 tablespoons Sugar
Salt and Pepper to taste

4 kilos of tomatoes- Wash and blitz in Magimix put in a very large pot with 2 liters of hot water and put on a rapid boil, while boiling, in another small pot heat up quarter of a liter of olive oil a whole head of garlic each clove peeled and cut in half and put on a very gentle heat for about 15 mins don't cook it let it infuse then pour oil and garlic into the boiling tomato water mixture add in 2 tablespoons of salt and 2 tablespoons of sugar, lower heat to a gentle simmer and let it reduce by half. Just before bottling add in whole basil leaves and pepper, taste and add more salt if necessary - you should make around 4 liters of tomato sauce
Serving Suggestions
Serve with Ravioli, gnocchi or pasta or spread on pizza base
