     Courgette Tomato and Bacon Baked Rice

1 onion chopped 1 garlic clove finely chopped 100gr lean bacon chopped 4 courgettes finely chopped or grated 3 small tomatoes skinned deseeded and chopped 1 1/3 cups long grain rice cooked A pinch of dried thyme 1 tbsp chopped parsley 100 grms grated parmesan 2 large or three small eggs beaten salt and freshly ground pepper
Fry chopped courgettes in a bit of olive oil till moisture evaporates and they start to colour slightly. Remove from pan add a little bit more olive oil and fry onion, bacon and garlic. Remove from heat and allow to cool. When everything is cooled mix all ingredients together ie fried onion, garlic, bacon, courgettes, chopped tomatoes, cooked rice, eggs, herbs, half the parmesan, salt and pepper. Place in baking dish and scatter with the remaining cheese. Bake for approx 40mins or till golden brown. Enjoy -)
Serving Suggestions
Tip-- For a dinner party divide the mixture among individual gratin dishes and bake for about 25 mins till set and golden.
