Sponge 300g plain flour 300g Caster Sugar 3 eggs 1 Tablespoon Baking Powder Temp 170 degrees for around 20-30 minutes Filling Irkotta 2 tablespoons sugar Roasted almonds grated chocolate 1 tablespoon of beaten cream(Hopla) Decoration Hopla Beaten grated chocolate roasted nuts Cheeries(if desired) or fresh strawberries when available
Method Beat egg and sugar together. Sift flour and Baking Powder and fold in the mixture. Temp 170 degrees for around 20-30 minutes When cold divide in two or three layers , wet with Brandy or vermouth. spread jam . In a processor corporate Irkotta with sugar and i tablespoon of the beaten hopla. Spread on the sponge, add roasted nuts and chocolate and repeat each layer. Decorate with Hopla(cream) roasted nutes, grated chocolate and cheeries or strawberries.
