100g ground pure almonds
100g castor sugar
lemon peel of 1 whole lemon
1 teaspoon almond essence1 egg white.
To coat before cooking -
prepare one plate of icing sugar and one plate of nibbled almonds.
I use the ronic machine but any machine is good or by hand
Mix almonds with sugar and lemon peel. add essence and egg white.
Take a teaspoon of the mixture and coat in nibbled almonds. shape and
pass through icing sugar. Place on rice paper . Make sure you don't
place them near each other. Bake for around 6 - 8 minutes on 180
degrees.
N.B. don't leave more as they get hard. As soon as u take them out of
the oven try to shape them again with your hand. Makes 12
