In a bowl cream the butter and sugar .
Add the eggs and milk.
Then beat in the sifted flour ,baking powder and
salt and lemon zest. Beat until its creamy .
Fill the cupcake cases 2/3 full. This mixture
makes about 16 cupcakes.
Bake in preheatd 170C oven .
When warm out from the oven you cupcake with a
fork and drizzle over it with a spoon of sugar or
icing sugar dissolved in some lemon juice . This
will give it an added tangy lemony taste.
You can also put some cup cake mixture in cupcake
case then half a teaspoon lemon curd and top with
some more cupcake mixture .
