Wash and boil lemons for about 2 hours
Let them cool a bit and cut ,discard the pips and
blend in a food processor.
Add the other ingredients and blend until you
have a smooth batter.
Put in a greased and floured tin and bake in
preheated 170C oven ,check to see if its done with
a skewer or tooth pick.
This can be made gluten free adding 250g ground
almonds,250g sugar,1 teaspoon baking powder and 6
eggs to the lemons.
If you do not like coconuts just add their weight
in self raising flour.
