This is a lovely chocolate cake ,light and moist
and like most of my cakes very easy to make and
using only a wooden spoon. This is the first time
I tried it and I was a bit worried because the
batter was a bit runny and thought it was too much
for my bunt tin so I poured some in a small bunt
tin ,then when they were ready I sandwiched
together with cream cheese icing .
Preheat oven 180C and grease a 24cm cake tin
In a large bowl sift the flour,baking
powder,baking soda and cocoa. Mix in the sugar and
orange zest.
In a saucepan melt the butter and add the kinnie .
In a small bowl beat the eggs with the orange
juice and add to the butter and kinnie .
Pour this mixture onto the dry ingredients and
beat until you have a smooth batter.
Pour the batter in the tin and bake for about 35-
40 minutes . Check with a skewer if it comes out
clean its ready.
Let it cool for ten minutes in tin then turn out
to cool.
When its cool you can decorate with a ricotta or
cream cheese icing . Use a tub of cream cheese or
350g ricotta and stir it well with 3 tablespoons
sifted icing sugar and a tablespoon of
kinnie.Decorate with orange zest .
