     Apple & Hazelnut Cake

1 cup flour
2 cups ground hazelnuts
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
3 eggs
1 teaspoon vanilla
grated zest and juice of half a lemon
1/2 cup oil
2 cups sugar if you like it sweet ,I used 1 1/2 cups
5 cups chopped apples

Preheat oven to 160C and grease & lightly flour a 13in by 9in oven dish. Peel and chop the apples putting them in a bowl. Sprinkle the cinnamon ,zest and lemon juice over them and stir. In another bowl beat the eggs ,oil and vanilla with a whisk .I used a hand whisk . Add the sugar and whisk some more until well combined. Sift in the flour,baking powder & pinch of salt and add the ground hazelnuts. Mix in with a spoon until you have a smooth batter. Stir in the apples ,do not worry if if see that that it seems there is too little batter and a lot of apples when it bakes it will expand nicely. Spread in the oven dish and bake until skewer comes out clean ,mine was ready in about 35 minutes in a fan oven. Best is to set timer for 30minutes and check as not all ovens are the same.
