4 carrots sliced, 1 and 1/2 ltrs hot stock or water
2 large celery stalks sliced, seasoning
1 small tin tomato paste
2 bay leaves
6 potatoes thickly sliced
Instructions
Method for Marrows-
Put the filling ingredients in a bowl and mix well
,I prefer to use my hands so they are well
combined.
Fill the marrow shells and if you have left over
filling roll into small meat balls.
Stew Method-
n a pot heat some oil and fry the
onions,celery,carrots,garlic and bay leaves.
Then add the mixed spice and cinnamon and fry for
about 5 minutes.
Stir in the tomato paste and cook for a bit then
pour in the stock or water.
Season according to taste and put in the marrows
,peas if using and on top place the potato slices.
Cover and when it star
ts to boil put on low heat and let it simmer .
When ready take out the cooked marrows and poatoes
with slotted spoon .
Then add about 400g ditini rigate pasta to the
stew.
The pasta will thicken and absorb the stew.
If you do not want to add the pasta just serve it
as it is ,use less stock when preparing stew.
