Marinate rabbit pieces in lots of garlic,bay
leaves,mixed spice,salt & pepper,soy & worchester
sauce. Leave in marinade overnight or a few hours.
Fry the rabbit and reserve marinade liquid. In
same pan as you fried rabbit fry sliced onions
,add to it all spice and cinnamon ,add chopped
carrots and sliced potatoes and fry ,then add some
chicken or veg stock ,you can add peas too if you
like . Just leave til stock starts to boil then
take off heat. Put half the onion potato mixture
in an oven dish ,put the fried rabbit pieces then
the remaining onion potato mixture on top .
Sprinkle with salt and pepper,cover with foil and
put in a 200C oven . Check after 45 mins to see
if rabbit is tender and uncover to crisp the
potaoes if you like.
I omit using wine because we do not drink alcahol
in our home as my husband is Muslim ,so you can
add wine to the marinade ingredients if you wish.
