Put 2 cups couscous in a bowl,add salt,teaspoon
tumeric,teaspoon ground cumin.Mix then add some
olive oil and mix it well so couscous is coated.
Add 3/4 cup boiling water or chicken stock.Stir
well ,cover and leave so couscous swells and gets
tender.
Chop tomatoes,cucumber,green pepper and parsley
finely and add to the couscous plus juice of a
lemon and mix well.
Its similar to tabbouleh but made with couscous
instead of bulgar wheat.
