Line a greased dish with short crust or puff
pastry ,for this I used ready rolled pastry very
good to keep in the fridge to make quick pies or
quiche. Then I sauted some chopped onions and
added the chopped wudy sausages . In a bowl I
mixed the fresh rikotta with sesoning ,finely
chopped parsley and eggs depending how much
rikotta you are using,with 400g I use 3 eggs.
Mixed the sauted onion & wudy with the rikotta
mixture and put it in the pastry dish .Fan Oven
160C ,gas mark 4 til rikotta is firm and pastry
golden.
