With couscous I use cumin and to make it red like
you buy at the Turkish restaurant ,mix the dry
couscous in a bowl with salt and add olive oil to
separate the grains so it will be fluffy and not
sticky.In a pot fry a finely chopped onion,add a
tspn of turmeric & cumin then about 3 tablespoons
tomato paste fry while stirring then add 25oml
water or stock if using 500g couscous. Let it boil
and simmer a bit then pour over the couscous. Stir
and then leave it til it absorbs the liquid .
Fluff with a fork and serve warm or cold. You can
make it spicy using chili powder or frying finely
chopped red pepper with the onion. Or you can make
it as a salad adding only stock ,cumin ,turmeric
if you like the yellow colour ,finely chopped veg
like cucumbers,tomatoes ,green peppers & lots of
parsley and grated rind and lemon juice.
