Half a chilli pepper, seeds removed according to taste
5 slices of Maltese bread, soaked in water and then squeezed and crumbled
good olive oil
Instructions
tart by boiling salted water for pasta. Next,take
a largish frying pan and put on medium fire, after
half a minute add one whole clove of garlic and
the sliced courgette. As soon as courgette is
nicely browned remove from pan and put aside on
plate, add a little more olive oil only if
necessary and brown the mollica. This might take 5
minutes, once crisp remove and place with
courgette. Now you might need to add a little
olive oil and place anchovies, chili, capers,
tomatoes and stirring with wooden spoon just allow
the anchovies to melt. REMOVE WHOLE GARLIC.
Meanwhile, your pasta should be almost but not
quite done. With some tongs and take your pasta
out of the water and place in pan with the anchovy
mix and add the mollica and courgettes, (don't
drain, you need those few drops of water still
clinging to pasta to make it to the pan, not more
than a tblsp in total) toss well and voila! A
truly delicious plate made with next to nothing!
Enjoy! Don't forget to serve with grated Parmesan!
