     STUFFED GREEN PEPPERS

Ingredients
for 4 persons
1 medium sized green pepper per person
1.5 cups of nearly cooked rice (ie boiled but taken off fire 5 minutes before time)
4 anchovy fillets chopped
12 stoned olives (green)
1 large and 1 small cans of tuna
1 small onion finely chopped lightly fried in olive oil
Parsley, mint, basil finely chopped
Salt & pepper
 
For the sauce
Either 6 large, flat(tadam catt) , plump, ripe tomatoes (peeled and choppd)
or 2 cans of crushed tomatoes
1 clove garlic just bashed with the flat blade of knife
1 small onion very finely chopped
1 tbsp tomato paste
1 tsp sugar
1 tbsp capers
1 tbsp good quality red wine vinegar

Instructions
So we start by making the filling. Just put the rice in a bowl and add pepper and salt, tuna, olives, anchovies, onion and herbs and mix well. Next take the peppers and chop off tops and deseed taking care not to break the peppers. Remove white membrane as much as possible also. Next lightly fry empty peppers in same pan with dash of olive oil as where you had previously fried onion for filling. The scope is to briefly give them a sizzle and soften them. Next stuff peppers with filling and put to the side.
Take the same pan…note there should not be any hint of burnt oil or onion in it. Do not use extra virgin olive oil due to its low resistance to heat. Add dash of olive oil and once pan is hot again take the crushed clove of garlic and let it sizzle till it starts to change colour to golden. Remove garlic and add onion and sautee till soft. Add the tomato paste and cook it out and add the tomatoes as well as the sugar.
Please taste the sauce to judge how much sugar is needed. Tomatoes are acidic and one needs to taste to adjust. Add capers and vinegar and leave to simmer till the peppers are nice and soft and yummy! Lovely with crusty bread and reminiscent of Kappunata.
