     Beet Salad

Ingredients
4 medium beets
4 cups baby arugala or baby kale or spinach
1/4 cup chopped fresh flat-leaf parsley (optional)
1 tbsp chopped fresh chives
1/2 package crumbled goat cheese
1/4 cup chopped walnuts
salt
pepper
1/4 cup preduced fast balsamic vinaigrette
 
1/4 cup extra virgin olive oil (optional)

Instructions
Prick the skin of the beets with a fork. Microwave beets until tender (about 12 minutes) or wrap beets in foil and roast them in the oven or toaster oven for 1 hour at 375 F. I put my beets in the oven. When they are cool, peel and slice into bite size pieces. Mix everything together and enjoy!
