Slices of aubergine brushed with some olive oil on
both sides,seasoned with salt and pepper,on a
lined baking sheet,some crushed tomato sauce with
garlic and oregano ,sliced olives then a generous
sprinkling of grated cheese. I used mature cheddar
cheese. Then in a preheated 200 C oven until the
aubergine is done . Really yummy !
