Today I sauteed thickly cut
onions,eggplant,carrots,marrows,mushrooms,yellow
and green peppers,potatoes and garlic. Added some
curry ,lemon pepper and chopped mint . Then I put
the veg in an oven dish. Lightly fried to seal
some lamb leg slices I had previously marinated in
soy,worchestershire sauce and garlic . Put them on
top of the veg ,covered with foil and baked for
aprox 40minutes then uncovered and baked for
15minutes more.
