     Rainbow Quinoa Salad

Ingredients
1 cup quinoa, rinsed
1 can black beans
1 carrot, diced
1 celery stalk, diced
12 cherry tomatoes, quartered
1 small cucumber, diced,
1 scallion, sliced
2 cloves garlic, minced
Juice from 1/2 a lemon
 
1/4 cup olive oil
1/4 apple cider vinegar
dash of cayenne pepper
dash of cumin
salt and pepper, to taste
sugar, to taste

Instructions
1) Cook quinoa with 2 cups of water in a rice cooker. Use this time to prepare vegetables and other ingredients. Once the quinoa is cooked, set aside to cool.
2) Combine all chopped veggies with black beans in a large bowl. Add in the lemon juice and vinegar.
3) Toss with the cooled quinoa to combine ingredients. Add in salt and pepper, as well sugar, to taste.
Serving Suggestions
275 calories per serving.
