     Santa Fe Salad Dressing

Ingredients
3 whole big cloves of garlic
1 tablespoon packed minced fresh ginger (can use freeze dried ginger too)
2 bunches cilantro, (rinsed well, most of stalk ends trimmed off) finely chopped
1/2 cup fresh lime juice
1-1/2 teaspoons wine vinegar
1/2 teaspoon ground cumin
3/4 teaspoon salt
1/2 teaspoon freshly ground pepper
1 tablespoon honey
 
1/2 cup freshly grated parmesan cheese
1/2 cup canola oil
1/4 cup olive oil

Instructions
Combine all ingredients in a food processor or process with an immersion blender. If you don’t have either of these, you’ll have to chop everything really fine and it will be a pain in the ass and it won’t really turn out right. Sorry, but it’s the truth.
