     Carrot Fruit cake

Ingredients
100g self-raising flour
100g whole-meal flour
100g dry fruit (black,golden raisins & dates)
100ml sunflower oil
3 eggs
1/2 tsp nutmeg
1 tsp cinnamon
1 grated orange peel
1 tsp baking powder
 
3 medium sized grated carrots

Instructions
Mix the flour, dry fruit, cinnamon, nutmeg, grated carrots & orange peel altogether. Beat eggs & combine with the oil. Mix all ingredients together & place in a silicon dish ready for baking!
Bake for about 20 minutes in a preheated oven at 200 degrees Celsius.
Serving Suggestions
You can serve it warm with one scoop vanilla ice-cream or just with a cup of tea or coffee!!
