Beat eggs slightly; add sugar, oil, pumpkin and beat thoroughly. Add dry ingredients and mix until smooth. Stir in chocolate chips & nuts (optional). Fill muffin cups 2/3 full and sprinkle tops with brown sugar. Bake at 375 degrees for 15 to 20 minutes. Makes 3 dozen muffins. If desired, drizzle powdered sugar glaze over muffins while still warm.
