     Healthy Fried Chicken

Ingredients
1/2 a sleeve of GF crackers or
1/2 C of any GF corn cereal
or 1/2 C GF chips
3/4 teaspoon cayenne pepper
1/2 teaspoon garlic powder or garlic salt
2 egg whites
1 cup lowfat, plain greek yogurt
1 tablespoon Dijon mustard or dry mustard
1/2 teaspoon salt
 
Olive oil cooking spray
4 medium sized skinless chicken breasts

Instructions
Preheat oven to 375. Lightly spray a baking sheet with olive oil. Combine the crackers and corn cereal crumbs or chips, cayenne, and garlic powder in a shallow bowl.
In a large bowl, combine egg whites, yogurt, mustard, and salt. Add the chicken pieces and coat thoroughly with the yogurt mixture. If you want, you can throw all this in a bag and marinade for a while before you dip into crumb mixture.
Arrange the chicken on a baking sheet and spray lightly with olive oil cooking spray. Bake for 50 to 60 mins. and enjoy! Don't forget to spray the top with olive oil.
for extra flavor, add a little honey to the milk mixture.
