     Pumpkin Balls

Ingredients
1 C pumpkin puree
2 1/2 tsp cinnamon
3 tbsp agave syrup
3 tbsp honey
1/2 C unsweetened almond milk
2 tsp vanilla extract or pure vanilla
3 C GF old fashion oats
1/2 C Hersheys SUGAR FREE chocolate chips
1 huge chilled/cold bowl
 

Instructions
Combine pumpkin puree and spices in saucepan over medium heat. Bring to a slow boil then reduce to low. Let cook and reduce on stovetop until mixture is about 1/2 cup. Add syrup and honey and milk and cook until mixture comes to a boil, bring to low heat. Stir until smooth, making sure all is mixed well. Add vanilla extract and mix until combined. Stir in oats, one cup at a time until completely coated in pumpkin mixture.
Pull off stove and set in a chilled bowl- Let come to room temperature for about an hour. Mix in sugar free chocolate chips and take ice cream scooper and scoop onto waxed or parchment paper and place in refrigerator- enjoy.
These are not super sweet... kind of interesting at first... but they are very addictive- when I am craving something sweet I crave these- especially during the fall!!!
