Set out your crockpot and start slicing onions and peppers. Place
bell peppers on the bottom, drizzle with olive oil. Set onions on top
and add the chicken. Sprinkle chicken generously with seasoning
and also olive oil and add in salsa all over.
heat on high for 4 hours or low for 4-6... take two forks and shred
chicken and let soak up juices. put in a bowl and serve with black
beans and rice and tortillas or what I use is lettuce wraps!
