2 egg whites (or 2 tbsp. flax meal - 6 tbsp. water left for 10 minutes to gel)
1 tsp. vanilla
1/4 cup raisins
1/4 cup craisins
2 tbsp. unsalted sunflower seeds
Instructions
1) Preheat oven to 370°F. In a small bowl, combine
first 6 ingredients. In a larger bowl, whisk
together the applesauce, Splenda, eggs, and vanilla.
2) Slowly add the dry to wet until combined, then
stir in the raisins, raisins, and sunflower seeds.
3) Using an ice-cream scooper (or a large spoon),
section out 12 mounds of cookie dough onto a Silpat
or parchment covered baking sheet. Leave them as
mounds, or flatten.
4) Bake cookies for 10 minutes, then remove from
oven and let cool. Flip cookies over and bake for
another 2 minutes, then remove to let cool once
more.
