     THERESA’S ZUCCHINI GERMAN CHOCOLATE BREAD

Ingredients
1 ½ c. oil (I use 1 c. oil and ½ c. applesauce)
3 c. sugar
1 Tbs. vanilla
4 eggs
2 tsp. baking powder
1 ½ tsp. cinnamon
1 tsp. soda
4 oz. German sweet chocolate (Bakers)
3 c. raw zucchini, shredded
 
3 c. flour
dash of salt

Instructions
Beat eggs until foamy and add sugar; beat well. Add oil and vanilla; continue beating. Then add the shredded zucchini and beat well. In another bowl, add a little water with the chocolate and microwave for about a minute or until chocolate begins to melt. Stir until melted. Add to mixture and then add dry ingredients to mixture and beat. Pam spray two loaf pans and pour mixture in pans. Bake at 350 degrees for 35 minutes or until toothpick comes clean.
