     Creamy Tomato Soup

Ingredients
1 medium onion, chopped
2 teaspoons minced garlic
1 (28 ounce) can diced tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon apple cider vinegar
1 cup vegetable broth
3/4 cup almond milk
salt and pepper, to taste
 

Instructions
1) Heat a large pot over medium high heat. Add onion and cook, stirring occasionally, until golden, about 5 minutes. Stir in the minced garlic and cook for another minute. Add the tomatoes, oregano, basil, and apple cider vinegar, and bring to a boil. Once boiling, add the broth and almond milk and bring to a boil once again.
2) Puree the soup in batches in a standing blender. Pour back into pot and add salt and pepper. Let the soup simmer - the longer the better for the soup to become thicker and more flavourful.
