     BANANA CAKE WITH FROSTING

Ingredients
2 1/2 cups flour
1 2/3 cups sugar
1 1/4 cups mashed bananas
1 cup pecans, finely chopped
2/3 cup oil
2/3 cup buttermilk (divided into 1/3 cup each)
1 1/4 teaspoons baking powder
1 1/4 teaspoons baking soda
1 teaspoon salt
 
3 eggs
Caramel Frosting-
2 1/2 cups sifted confectioners sugar
1 cup brown sugar
1/2 cup butter
1/4 cup milk or evaporated milk
1/4 teaspoon salt

Instructions
Cake- Sift all dry ingredients together in a mixing bowl. Add eggs and 1/3 cup buttermilk and beat for two minutes. Add oil and 1/3 cup buttermilk and beat two minutes. Fold in the pecans and bake in 350 degree F. oven for about 35 minutes for a layer cake or 45 minutes for a oblong cake. Cool on a cooling rack and ice with caramel frosting.
Caramel Frosting- Melt the butter in a large saucepan. Add in the brown sugar and the salt and cook on low heat until the mixture is thick, stirring constantly. Add in the evaporated milk, stirring constantly until the mixture comes to boiling. Remove the mixture from the heat and blend in the confectioners suger. Thin the mixture down with a small amount of milk if necessary. Makes enough frosting for a 8 inch or 9 inch layer cake.
