     Turkey Spinach Meatballs

Ingredients
1 lb lean ground turkey
1 cup chopped fresh spinach
3 Tbsp 100% liquid egg whites (or egg whites from 2 eggs)
1/4 cup Romano cheese
1/4 cup Italian style bread crumbs
Salt and pepper to taste
1 tsp onion powder
1 Tbsp garlic powder
1/2 tsp dried oregano
 

Instructions
1) Combine all ingredients in a mixing bowl (maybe with hands). 2) Roll into 9 (1.8 oz) meatballs. 3) Place each meatball in one slot of a cupcake tin. 4) Bake at 350F until golden brown and cooked through - about 35 minutes. Flip after 20 minutes.
After cooling, may freeze in sandwich bags for later use.
Ideas for uses - scrambled eggs, spaghetti squash, zucchini lasagna, on salads, or with marinara sauce.
