     JANE'S OVEN-BAKED HOME FRIES

Ingredients
4 medium-large unpeeled potatoes, cut in 1/2 inch cubes
3 Tbs. butter or margarine
1 medium onion, diced
 

Instructions
Place the potatoes in a saucepan, cover with water, and boil for 10 minutes. Drain the water and cool. Melt the butter in baking dish and add the potatoes and onions. Stir to coat and bake at 350 degrees for 30 to 40 minutes, occasionally flipping to brown on all sides. Serves 4 to 8 depending on if they are a main or side dish. Can sprinkle a little garlic salt on the potatoes if desired. If you like, you can sprinkle cheese over the fries and sprinkle crumbled bacon on top. Allow cheese to melt.
