In a large mixing bowl, combine water, yeast and sugar. Dissolve with wisk. Add 1 cup flour and let stand will bubbly, 1 to 2 minutes. Add salt, and oil. Add flour a little at a time, mixing with a wooden spoon. Keep adding until you have a workable mass. Add flour by hand until it is no longer sticky. Oil you hands and knead for 10 minutes. Dough should be smooth and elastic. Place in plastic bag with all air removed. Let rise 2 hrs. Divide in 1/2 and stretch to fit greased stone. Top with sauce and anything else. Bake at 450 degrees til brown and bubbly. 15 min.
