Combine 2 C warm water, butter and brown sugar in a bowl. sprinkle yeast on top and let stand until foamy, about 10 min....if it doesn't get foamy start over
Add 3 cups flour and 2 tsp salt to the yeast mixture, use mixer with paddle handle if you have it, if not mix by hand, mix in the remaining 3 cups flour and continue to mix....Turn the dough on a clean surface and knead until smooth about 5 minutes.... Brush a large bowl with melted butter, add dough, turn to coat. cover with plastic wrap and let rise in a warm place until doubled in size about a hour.
punch dough down, divide it in half and divide each half into 6 even pieces. line baking sheets with parchment paper and coat with cooking spray. roll out a piece of dough on the countertop with hands, starting in the middle and working your way to the ends until you have a 24 inch rope...as you roll occasionally lift the dough by the ends and slap the middle against the counter. lift the ends of the rope to make a U shape, then cross one end over the other twice to make a double twist in the middle, fold down the ends and attach them to the bottom of the U forming a pretzel shape. transfer each to parchment paper, cover and let rise 30 minutes. position racks in the upper and lower thirds of the oven, preheat to 425....fill a wide pot with 10 C water add the baking soda and bring to a low simmer, whisking to dissolve.
Carefully slide one pretzel at a time into the water (can do 3 at a time), simmer 45 seconds, turn and simmer 45 seconds, remove from water with slotted spoon, let water run off, put on greased pan and sprinkle with salt, repeat with remaining pretzels, bake 12 to 15 minutes, switching racks at halfway point. remove from over and brush with melted butter
