     Cauliflower Soup with Cheddar

Ingredients
2 pints of chicken or meat stock (about 1 litre, or 4 cups)
1 large cauliflower
7oz heavy cream
3.5 oz cheddar
2 cloves of garlic (optional)
Coarsely ground pepper
Small pinch of nutmeg
Salt
 

Instructions
Heat up the chicken stock Chop up cauliflower and garlic (if using) into small bits Add chopped cauliflower and garlic to stock Simmer for 10-15 minutes, until cauliflower is very soft Add double cream and grated cheddar Season with salt, pepper and nutmeg to taste Cool and blitz in a food processor
